La fibra aliment\u00e0ria \u00e9s la resta de c\u00e8l\u00b7lules vegetals que s\u00f3n resistents a la digesti\u00f3 aliment\u00e0ria per part dels enzims digestius humans. \u00c9s part de la nostra dieta fa segles gr\u00e0cies als beneficis que aporta per al proc\u00e9s digestiu, no tant pels nutrients que aporta. B\u00e0sicament, totes elles s\u00f3n mol\u00e8cules de sucres unides de tal manera que el nostre cos no pot atacar les unions, amb el que els sucres no queden lliures perqu\u00e8 els utilitzem. Per\u00f2 els bacteris s\u00ed que poden atacar aquestes unions per a utilitzar els sucres en un proc\u00e9s d\u2019obtenci\u00f3 d\u2019energia anomenat fermentaci\u00f3. La fibra es classifica de diverses maneres, per\u00f2 una de les m\u00e9s acceptades \u00e9s aquesta:<\/p>\n<ul>\n<li>Fibra insoluble en aigua i dif\u00edcil de fermentar pels bacteris intestinals.<\/li>\n<li>Fibra soluble en aigua, m\u00e9s f\u00e0cil de fermentar.<\/li>\n<\/ul>\n<p>Els diferents sucres que componen la fibra i les diferents unions entre els sucres determinen que la fibra pertanyi a un grup o l\u2019altre.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"quines-son-les-fibres-insolubles\"><\/span>Quines s\u00f3n les fibres insolubles?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Aqu\u00ed trobem a la cel\u00b7lulosa, l\u2019hemicel\u00b7lulosa i la pectina.<\/p>\n<ul>\n<li>La cel\u00b7lulosa \u00e9s el principal component de la paret cel\u00b7lular dels vegetals. \u00c9s la fibra que d\u00f3na fermesa a les c\u00e8l\u00b7lules i la trobem en els vegetals i en el seg\u00f3 dels cereals. Est\u00e0 formada per la uni\u00f3 successiva de mol\u00e8cules de glucosa a trav\u00e9s d\u2019una mena d\u2019enlla\u00e7 (beta-1,4-glucos\u00eddic) que no podem trencar en el nostre intest\u00ed de cap manera.<\/li>\n<li>L\u2019hemicel\u00b7lulosa es troba en els grans dels cereals. Est\u00e0 formada per diversos sucres (xilosa, galactosa, manosa, arabinosa) i est\u00e0 ramificada (cada sucre pot unir-se a m\u00e9s d\u2019un sucre). En enlla\u00e7 beta-1,4-glicos\u00eddic existeix, per\u00f2 tamb\u00e9 hi ha uns altres que es poden trencar amb m\u00e9s facilitat.<\/li>\n<li>La lignina es troba en els vegetals que donen fusta i no est\u00e0 feta de sucres, sin\u00f3 de mol\u00e8cules anomenades&nbsp;fenilpropanoides. Hi ha m\u00e9s de 40 mol\u00e8cules diferents involucrades en la formaci\u00f3 de lignina. La for\u00e7a dels enlla\u00e7os entre els&nbsp;fenilpropanoides&nbsp;\u00e9s tal que la lignina \u00e9s un dels pol\u00edmers naturals m\u00e9s inerts (\u00e9s a dir, que menys interactua amb altres mol\u00e8cules).<\/li>\n<\/ul>\n<h2><span class=\"ez-toc-section\" id=\"quines-son-les-fibres-solubles\"><\/span>Quines s\u00f3n les fibres solubles?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Les fibres solubles abasten la pectina, les gomes i els muc\u00edlags.<\/p>\n<ul>\n<li>Les pectines s\u00f3n part de la paret cel\u00b7lular de les fruites, verdures, llegums i altres vegetals. Estan formades per diversos sucres, sent el principal un derivat de la galactosa (\u00e0cid D-galactur\u00f2nic). Les pectines s\u00f3n molt solubles en aigua (poden formar gels) i s\u00f3n gaireb\u00e9 completament metabolitzades pels bacteris del c\u00f2lon. Els aliments rics en pectina s\u00f3n d\u2019inter\u00e8s quan hi ha diarrea (ex: poma o patata cuita) justament per aquesta capacitat de gelificar l\u2019aigua, espessint el contingut intestinal.<\/li>\n<li>Les gomes s\u00f3n productes que la planta secreta quan t\u00e9 una ferida. Les gomes segellen l\u2019obertura, evitant l\u2019entrada de pat\u00f2gens i facilitant la cicatritzaci\u00f3. Les m\u00e9s conegudes s\u00f3n la goma&nbsp;guar,&nbsp;goma tragacant, goma&nbsp;karaya&nbsp;i goma ar\u00e0biga. Estan formades per sucres i \u00e0cids derivats de sucres similars en cada goma, per\u00f2 arreglats en diferents proporcions i amb diferents enlla\u00e7os qu\u00edmics. Les gomes s\u00f3n molt solubles en aigua i formen solucions viscoses.<\/li>\n<li>Els muc\u00edlags s\u00f3n productes que s\u2019inflen en aigua, augmentant el volum del l\u00edquid i formant solucions viscoses i gels. Estan formats per diferents sucres (manosa, glucosa, galactosa) i els seus derivats \u00e0cids. Entre els m\u00e9s coneguts trobem el muc\u00edlag d\u2019isp\u00e0gula&nbsp;(el fam\u00f3s&nbsp;Plantaben\u00ae), el de lli, el de malv\u00ed i els gels derivats de les algues (carragenan, alginats).<\/li>\n<\/ul>\n<h2><span class=\"ez-toc-section\" id=\"quines-propietats-te-la-fibra-dietetica\"><\/span>Quines propietats t\u00e9 la fibra diet\u00e8tica?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Les diferents fibres diet\u00e8tiques s\u00f3n molt bones per al nostre organisme:<\/p>\n<ul>\n<li>S\u00f3n bones laxants. La fibra soluble \u00e9s capa\u00e7 de gelificar en pres\u00e8ncia d\u2019aigua, amb el que augmenta el volum de la mat\u00e8ria fecal. Serveix per a aquests casos de restrenyiment en els quals la mat\u00e8ria fecal \u00e9s molt dura i petita, d\u2019aspecte capr\u00ed, i volem retornar-li la suavitat i el volum usuals. Tamb\u00e9 donen alleujament en cas d\u2019hemorroides. En canvi, la fibra insoluble d\u00f3na volum per si mateixa, amb el que forma major quantitat de mat\u00e8ria, que estimula a l\u2019intest\u00ed i afavoreix la seva expulsi\u00f3.<\/li>\n<li>Ajuden a controlar el nivell de colesterol en sang. La fibra soluble \u00e9s capa\u00e7 de retenir sals biliars en la seva estructura intestinal. Com les sals biliars provenen del colesterol, aquest mecanisme estimula una disminuci\u00f3 del colesterol en sang.<\/li>\n<li>Ajuden a baixar de pes. La fibra soluble \u00e9s un excel\u00b7lent saciant, per la qual cosa ajuda a menjar menys quantitat de menjar sense passar fam.<\/li>\n<li>Baixen el risc de desenvolupar c\u00e0ncer de c\u00f2lon. En augmentar els moviments intestinals evita que la mat\u00e8ria digerida es quedi molt temps en el cos, baixant l\u2019exposici\u00f3 del c\u00f2lon a productes t\u00f2xics per a les c\u00e8l\u00b7lules generats durant la digesti\u00f3. Alguns productes de fermentaci\u00f3, com els \u00e0cids grassos de cadena curta, tamb\u00e9 protegeixen a l\u2019intest\u00ed del mal.<\/li>\n<li>Controlen la glic\u00e8mia. Diverses fibres, particularment les presents en alguns grans, ajuden a controlar els pics de glic\u00e8mia, augmenten la sensibilitat a la insulina i milloren el control de la diabetis tipus II.<\/li>\n<li>S\u00f3n prebi\u00f2tiques, \u00e9s a dir, estimulen el creixement dels bacteris intestinals. Aix\u00f2 es deu al fet que s\u00f3n un nutrient per als bacteris, encara que no ho siguin per a nosaltres mateixos.<\/li>\n<\/ul>\n<p>La part negativa de la fibra soluble \u00e9s que pot retardar o dificultar l\u2019absorci\u00f3 de certs nutrients, ja que els ret\u00e9 en la xarxa que forma a l\u2019interior de l\u2019intest\u00ed. Tamb\u00e9 poden generar molts gasos, ja que els bacteris que fermenten les fibres ho fan en un proc\u00e9s que augmenta la producci\u00f3 de gas. Si decideixes augmentar el teu consum de fibra, fes-ho a poc a poc, aix\u00ed evitar\u00e0s aquesta desagradable conseq\u00fc\u00e8ncia del consum de fibra.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"quins-aliments-son-rics-en-fibra\"><\/span>Quins aliments s\u00f3n rics en fibra?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>B\u00e0sicament, els aliments d\u2019origen vegetal. La dieta mediterr\u00e0nia \u00e9s molt rica en diversos tipus de fibra perqu\u00e8 inclou grans, llegums, fruites i verdures, totes elles fonts de fibra. Entre els aliments m\u00e9s rics en fibra (comptant per raci\u00f3 i no per gram d\u2019aliment) trobem:<\/p>\n<ul>\n<li>Freses<\/li>\n<li>Prunes seques<\/li>\n<li>Peres<\/li>\n<li>Pomes<\/li>\n<li>Gerds<\/li>\n<li>Carxofes<\/li>\n<li>Faves<\/li>\n<li>P\u00e8sols<\/li>\n<li>Patata amb pell<\/li>\n<li>Pans amb llavors<\/li>\n<li>Aliments integrals (pasta o pans)<\/li>\n<\/ul>\n<p>Depenent de l\u2019estat intestinal pot ser molt benefici\u00f3s afegir fibra o pot ser millor retirar-la. Les persones restretes haurien de prendre abundant fibra per a anar m\u00e9s vegades al lavabo i amb menys dolor. En canvi, les persones que sofreixen de la s\u00edndrome d\u2019intest\u00ed irritable, diverticulitis o altres problemes intestinals poden beneficiar-se en baixar un o tots dos tipus de fibra en la seva dieta.<br \/>\nSi desitges canviar la teva alimentaci\u00f3 perqu\u00e8 tens algun problema digestiu parla amb un professional de la salut. El teu metge o el teu farmac\u00e8utic poden orientar-te, ajudant-te a augmentar el que et serveix i a disminuir el que et causa mol\u00e8sties.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"quins-altres-usos-tenen-les-fibres\"><\/span>Quins altres usos tenen les fibres?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Molts! Les fibres tenen moltes aplicacions:<\/p>\n<ul>\n<li>En la cuina com a ingredient (l\u2019agar \u00e9s un muc\u00edlag utilitzat tradicionalment com a ingredient en la cuina japonesa).<\/li>\n<li>En la ind\u00fastria aliment\u00e0ria per a&nbsp;texturitzar&nbsp;aliments o per a fer-los m\u00e9s nutritius (\u00abfont de fibra\u00bb \u00e9s un&nbsp;claim&nbsp;que posiciona millor a un aliment enfront dels seus competidors).<\/li>\n<li>En la ind\u00fastria farmac\u00e8utica com a laxants o com a excipient dels medicaments (ex: xarops amb gomes per a suspendre millor el principi actiu d\u2019inter\u00e8s).<\/li>\n<\/ul>\n<p>Encara que coneixem bastant b\u00e9 a les fibres, encara es pot investigar molt en els seus diferents usos, en els canvis que sofreixen en condicions&nbsp;diferents de les&nbsp;fisiol\u00f2giques, o en les transformacions que sofreixen en processos no fisiol\u00f2gics (per exemple, a la calor d\u2019un forn).
